And another one from the PME course, actually not ready yet, but it shows another technique I practiced: colourflow (or runouts).

You first pipe the outlines of your patters (visible at the bottom of the cake) and then you thin your icing and fill the outlines with it.

You can also do a runout separately on a sheet of baking paper. The top collar on the cake is an example of that. In the open pieces of the collar I added some stringwork as well.

If you look back at some previous photos in this gallery, you will recognize the same technique having been used for the royal icing butterflies, and way back in 2007, also for the Cars run out. My technique has improved since then ;o).
